<Yuutei Dashi of Life>
We use bonito, Ago (flying fish) from Kagoshima Prefecture, and Rishiri kelp from Hokkaido.Bonito and kelp contain many umami ingredients, and the chin has a refreshing sweetness, and the synergistic effect increases the umami flavor many times.The bonito, chin, and kelp are carefully boiled for 4 hours to avoid clouding, resulting in a clear and flavorful soup stock.
